These cookie dough bites have become a bit of a sneaky family win. The kids were initially suspicious when they heard they contained chickpeas, but they happily ate them anyway. And my husband? He really liked them and still doesn’t know they’re made with chickpeas!
That’s exactly what I want from a flexible family snack — something that actually tastes good, rather than something everyone eats because it’s supposedly “healthy”. The chickpeas blend into the mixture, while tahini, maple syrup, vanilla, cinnamon and dark chocolate give these bites that sweet, cookie-dough-style flavour. They also add a little extra protein from chickpeas and tahini, without using protein powder.

A Real-Life Nut Free Cookie Dough Snack
I wanted to make a nut free cookie dough that would work as a school-friendly snack without relying on peanut or almond butter.
Tahini turned out to be a great fit. It’s easy to find, gives the mixture rich, smooth texture and works beautifully with chocolate and cinnamon.
I’ve made these as golf-ball-sized bites and get approximately 14 from a batch. I’ve also made smaller bites and completely coated them in chocolate. That version made 26 smaller chocolate-coated bites.
The chocolate coating was delicious, but honestly, I thought it was a little rich. However, I did take them to my daughter’s school sports carnival and the feedback from others was amazing. A drizzle gives you plenty of chocolate without completely covering the cookie dough, so that’s our preferred option.
Why This Chickpea Cookie Dough Bites Recipe Works
The chickpeas disappear into the mixture once they’re blended, and the combination of maple syrup, vanilla and cinnamon helps create that familiar cookie dough flavour.

- 400g tin chickpeas, drained and rinsed – These form the base of the cookie dough. Once blended really well, they give the bites a soft, doughy texture without an obvious chickpea flavour.
- ⅓ cup tahini – Adds richness, healthy fats and a subtle nutty flavour while helping create that soft cookie-dough texture. You can use another seed butter if preferred.
- ⅓ cup maple syrup – Adds sweetness and helps give the mixture its soft, fudgy consistency. Maple syrup has a mild flavour that works particularly well with tahini and dark chocolate. Swap: Honey works, but has a stronger flavour.
- 1½ teaspoons vanilla extract – Gives the mixture that familiar sweet, vanilla cookie-dough flavour and helps balance the chickpeas and tahini.
- ⅔ cup rolled oats – Blitzed into a flour, these help thicken the mixture and give the bites their cookie-dough texture. Gluten-free swap: Replace with gluten-free plain flour or almond meal. If using almond meal, the finished bites will have a slightly richer texture.

- ½ teaspoon ground cinnamon – Adds warmth and helps round out the flavour of the chickpeas and tahini. You won’t get a strong cinnamon flavour, but it makes a difference to the overall cookie-dough taste.
- ¼ teaspoon salt – A small amount of salt balances the sweetness and makes the chocolate and vanilla flavours stand out.
- ⅓ cup dark chocolate chips – These give you little bursts of chocolate throughout the cookie dough. I used regular-sized chocolate chips, which work well here. Dairy-free swap: Use dairy-free dark chocolate chips, or chopped chocolate if needed.
- 50–80g dark chocolate, optional – Use this for the chocolate drizzle or to completely coat the bites. We prefer a drizzle because it gives you plenty of chocolate flavour without making the bites too rich. Dairy-free swap: Use dairy-free dark chocolate.
- ½ teaspoon coconut oil, optional – Helps loosen the melted chocolate so it drizzles easily and gives a smoother coating if you’re covering the bites completely.

Step-by-Step Instructions
Conventional Method
- Add the rolled oats to a food processor and blitz until they resemble a fine flour.
- Add the chickpeas, tahini, maple syrup and vanilla. Process until very smooth.

- Add the blitzed oats, cinnamon and salt. Process until the mixture forms a soft dough.
- Stir the dark chocolate chips through the mixture.
- Refrigerate the mixture for at least 30 minutes to firm it up.

- Wet your hands and roll the mixture into approximately 14 golf-ball-sized bites. Keep wetting your hands as needed because the mixture can be sticky.
- Melt the dark chocolate with the coconut oil and drizzle over the bites.
- Refrigerate until the chocolate has firmed up.
💡The mixture should be soft but firm enough to roll after chilling. If it’s still too soft, add a little extra blitzed oat flour.

This is a handy recipe for using up a few simple pantry staples, especially when you have a tin of chickpeas and some chocolate sitting in the cupboard.
You can use either maple syrup or honey, although I prefer maple syrup because its milder flavour works particularly well with the tahini and dark chocolate.
The tahini can be swapped for another seed butter if that’s what you have. You can also use nut butter if you don’t need the recipe to be nut free. Keep the quantity roughly the same so the texture stays soft and doughy.
The rolled oats are blitzed into flour, so you don’t need to buy oat flour separately. For a gluten-free version, replace the oats with gluten-free plain flour or almond meal rather than using regular oats.
The chocolate is flexible too. Use dark chocolate chips in the mixture and either drizzle the finished bites with melted chocolate or coat them completely. We prefer the drizzle — it’s plenty of chocolate without making the bites too rich.
I wouldn’t make big changes to the chickpeas, tahini and oat flour quantities. These ingredients work together to create the soft cookie-dough texture, and changing the balance too much can leave the mixture either too sticky or too dry.

How to Store Cookie Dough Bites
Store the bites in an airtight container in the refrigerator. They should keep well for several days, although I doubt they’d last that long!
They’re best kept chilled because the chickpea and tahini mixture is soft at room temperature.
You can also freeze them. Place the bites in a freezer-safe container with baking paper between layers and thaw them in the refrigerator.

- Add the drained chickpeas, tahini, maple syrup and vanilla. Process until very smooth.
- Add the blitzed oats, cinnamon and salt. Process until the mixture forms a soft dough.
- Stir through the dark chocolate chips.
- Refrigerate the mixture for at least 30 minutes, or until firm enough to roll.
- While the mixture is chilling, melt the dark chocolate with the coconut oil in the microwave in 30-second bursts, stirring after each burst. You should only need 2–3 bursts; the residual heat will help melt any remaining chocolate.
- Wet your hands and roll the mixture into approximately 14 golf-ball-sized bites. Wet your hands again as needed because the mixture can be sticky.
- Using a teaspoon, drizzle the chocolate over the bites.
- Refrigerate until the chocolate is set.
- Add the rolled oats to the bowl and blitz on speed 9 / 1 minute, until they resemble a fine flour. Pour the flour into a separate bowl and set aside.
- Add the drained chickpeas, tahini, maple syrup and vanilla. Process on speed 7 / 1 minute, or until very smooth.
- Add the blitzed oats, cinnamon and salt and combine on speed 5 / 30 seconds, or until the mixture forms a soft dough. Scrape down the sides and repeat for another 10 seconds if needed.
- Stir through the dark chocolate chips.
- Continue from step 5 above.
