- If using raw salmon, add it to the bowl and cook for 6 minutes / 100°C / reverse / speed soft, until just cooked. Break into chunks gently with the spatula. If using pre-cooked or air-fried salmon, skip this step and add it at the end instead.
- Add the cream, Dijon mustard, and lemon zest. Cook for 3 minutes / 90°C / reverse / speed 2 until the sauce is smooth and combined.
- Add the baby spinach and cook for 1 minute / 90°C / reverse / speed soft until just wilted.
- Add the cooked pasta, salmon (if using pre-cooked), lemon juice, and parsley. Mix for 30 seconds / reverse / speed soft until everything is coated in the sauce.
- Add the pasta water slowly until the sauce is smooth and silky.
- Taste and season with salt and pepper.
