Method
- Toss the beef with the flour, salt and pepper until evenly coated.
- Heat the oil in a large heavy-based pot or Dutch oven over medium-high heat. Brown the beef in batches until deeply golden on all sides. Remove to a plate.
- Reduce the heat to medium. Cook the onion for about 5 minutes until softened.
- Add the mushrooms and cook for another 5–7 minutes until they've released their moisture and started to brown.
- Add the garlic and cook for 30 seconds.
- Stir in the tomato paste and cook for 2–3 minutes, stirring constantly, until it darkens slightly.
- Return the beef to the pot with the carrots, stock, Worcestershire sauce, tamari and herbs. Stir well, scraping up all the browned bits from the bottom of the pot.
- Reduce the heat to low and bring to a gentle simmer. Cover with the lid slightly ajar, and cook for 2½–3 hours, stirring every 30–40 minutes. The beef is ready when it falls apart easily with a fork.
- Remove bay leaf and adjust seasoning before serving.
If the sauce is thinner than you'd like, remove the lid for the final 15–20 minutes to let it reduce naturally.
