Method
- Preheat the oven to 180° and line a large baking tray with baking paper.
- Toss radish in olive oil and season with salt & pepper, then place on the baking tray and bake for 10 minutes.
- While the radish is baking, prepare the salsa verde.
- Place all salsa verde ingredients in a blender and blend until combined – leave the salsa chunky for texture.
- After 10 minutes add the broccolini to the tray and place the salmon fillets on top. Bake for 13 minutes or until the salmon is cooked to your liking.
- Remove from the oven and divide between the dinner plates.
- Spoon over salsa verde and enjoy while hot.
Run your fingers over the salmon fillet to check that all bones have been removed before cooking.
