- In a bowl, mix the olive oil, chicken, cumin, chilli powder, garlic powder, salt, onion powder, and paprika. Let it sit for 5 minutes while you prep the salad and cook the rice.
- Heat 1 tbsp olive oil in a frying pan over medium-high heat. Add chicken and cook for about 10 minutes or until cooked through.
- Add lime juice at the end of cooking and stir through.
- Assemble bowls with rice, salad vegetables, and chicken. Top with avocado and any optional toppings.
