Method
- Preheat oven to 170°C fan-forced and line or grease a 12-hole muffin tray.
- Mix milk and vinegar and set aside briefly.
- Combine dry ingredients in one bowl and wet ingredients in another.
- Gently mix wet and dry together until just combined. Do not overmix.
- Fold in any flavour add-ins.
- Divide into muffin cases (¾ full).
- Bake 17–19 minutes, turning tray halfway if needed.
- Cool slightly before serving.
Notes
- Batter should be thick but scoopable
- Do not overmix (important for texture)
- Add-ins: ½–¾ cup
